Play Your Part
The Commercial Compliance & HACCP Manager is responsible of ensuring that all Commercial outlets (F&B and Retail) across the resort (Parks & Hotel) are complying with local legislation and company polices. Providing a proactive approach to all reducing risks and ensuring the safety remains number one priority across LEGOLAND Dubai.
To ensure that all commercial products produced within the park is safe for consumption & use by using in-depth knowledge of food safety rules and municipal codes within the UAE. Will ensure the HACCP food safety management system is in place and effective. Specific duties performed will include training employees in safety procedures, reviewing any safety issues and recommending needed changes, developing new commercial safety procedures, and implementing these procedures (reviewing their effectiveness periodically). Must pay close attention to detail to be able to conduct appropriate, accurate inspections of their facility’s operations. Must stay up to date with all food safety standards and be able to articulate those standards to a wide variety of individuals within the park.
Main Responsibilities
Operations
Ensure strict compliance with all relevant Food safety and Health and Safety legislation and requirements.
Ensure that LEGOLAND Dubai sets the industry standard regarding Food / Commercial safety policies and procedures.
To ensure full compliance with Health & Safety legislation, including food hygiene
Delivery of the Commercial strategy in conjunction with the Commercial Director
To fulfil shifts as required during a 7-day trading week, involving some weekend and Public Holiday commitment.
Carry out Basic Food Safety training for frontline assistants, as well as ongoing refresher training such as but not limited to; allergens, HACCP, COSHH
To support recruitment, training, coaching and development. Lead the team with a hands-on approach.
To respond to and take ownership of any guest complaint relating to food quality, allergens or contamination or alleged food poisoning as the Person In Charge
To manage the relationship with all external regulatory authorities and carry out audits of key vendors annually
Develop and maintain documentation such as SOP’s as well as maintenance of manuals, policies and procedures that relate to any food safety concerns. Furthermore, review allergens and allergen controls.
Conduct facility food safety audits as well as manage third party audits across all Commercial entities
Development
Drive customer service training instilling a best practice culture amongst employees ensuring employees are accountable for their actions.
Research and report latest high street / industry standards to ensure the products/food offering we sell are appealing and safe in the context of the external marketplace.
The Commercial Compliance & HACCP Manager is expected to provide constant leadership, counselling, advice and feedback to their restaurant(s) and Retail Outlets. They must provide an environment of openness and trust, with constant feedback and performance coaching.
Identify training programs to aid own development
Trainings
Carry out Food Safety Training (Basic) with the F&B Assistants
Carry out PIC Training’s with supervisors and above
Complete weekly ‘topic of the weeks’ focusing on improvement of knowledge
Carry out refresher trainings as and when required
Ensure all staff are updated on any new process / procedures
Carry out ‘spot check’ knowledge-based trainings
System Based
Be a super user of the Food Watch System for LEGOLAND Dubai and ensure all outlets are using the Food Watch app as and when required
Ensure all systems are working as per the Policy and Manual
Audits
Carry out weekly & monthly audits across LEGOLAND Dubai & LEGOLAND Hotel, completing action plans for improvements along with the outlet supervisors
Carry out / manage the audits with Dubai Municipality
Carry out / manage the audits with external auditor to retain the HACCP standard
Carry out / manage the audits with Merlin Entertainments
Health & Safety
Managers/Supervisors are responsible for all aspects of Health, Safety & Security within their department, in line with the Group Policy (HS001). They must ensure that risk assessments have been carried out, that safe working procedures are in place for all work activities and that all employees under their management are aware of the Group Health, Safety and Security Policy and their obligations under it. They must ensure that safe working practices are monitored, and that risk assessments and procedures are reviewed regularly. Where incidents do occur, they must ensure that they are investigated appropriately and that where necessary, corrective action is taken to ensure that such incidents are not repeated.
Are You a Star?
Required Qualifications:
A Secondary education (or equivalent education and experience)
Minimum HACCP Level-3/Food Safety Level-3 Training. A level 4 Food Safety & HACCP certification is preffered.
Required Experience:
Ideally working 2 to 3 years as Cluster F&B Manager previously, progressive growth in F&B Division
Conducting food safety audits and investigations
Implemented HACCP systems and managed HACCP Certification
Worked with Dubai Municipality Food Safety systems (Food Watch)
Must be customer-service focused and understand customer expectations.
Must possess strong communication skills, both in a verbal and written format.
Effective organizational and problem-solving skills with the ability to make quick decisions required.
Ability to work as part of a team and to develop others within the team structure required.
Job-Specific Skills:
Advanced communication skills, written and verbal required. Being able to use written and spoken skills to explain tasks and give resoning and directions effectively.

Ability to stand for prolonged periods of time.
Intermittent and prolonged standing and walking to move about the park site and to interact with guests and other employees.
Ability to lift and move up to 12kg, and in some cases to do so repetitively.
Ability to lift and move up to 12kg over your head occasionally
Various inside and outside locations with varying temperatures and floor surfaces.
Must be willing to work flexible hours, including evenings, weekends and holidays to support park operations.
Must conform to park wardrobe and grooming guidelines.
