Role Summary:
Primarily responsible for calculating costs of food and beverage items and responsible for the short and long-term planning of the f&B controlling and pricing aspects.
To record information and produce control reports periodically to help maintain a suitable inventory of food and beverage items. Supervise and change the price of menus items based on the costing information collected Actively take part in engineering the menu in terms of the pricing.

Objectives of this Role

Supervise and change the price of menus items based on the costing information collected Actively take part in engineering the menu in terms of the pricing.
Develop business cases to support decision-making and support pricing decisions by creating innovative strategies for cost reduction
Establish and guide restructured cost analysis processes by creating fresh policies and procedures
Daily and Monthly Responsibilities
Connect, inspire, educate and engage by monitoring and mentoring personnel.
Oversee and manage work load the team and develop effective time management skills for department personnel.
Provide regular and ongoing feedback personnel. Conduct/attend regular weekly and or bi-monthly department meetings as needed.
Conduct probationary and annual performance reviews in a timely manner, ensuring KPI’s are established.
Promote and adhere to the company culture and company values.
Lead by example and encourage and motivate personnel, showing empathy and understanding.
Create a culture of mentorship coaching which focuses on active listening skills, actionable and constructive feedback Nurture leadership skills in employees of all levels within your team to help them achieve their full potential.
Align employee career vision with the business needs and always ensure effective communication practices.
Able to effectively control the Food & Beverage Cost.
Control the Food and Beverage outlets in terms of wastage, pilferage, and efficiency.
Prepare variance analysis for food & beverage and communicating with relevant parties.
Update and maintain receipts in the system Check and verify voids in the POS system Check and verify discounts on the POS systems Check and verify any happy hours discount Check and verify all complimentary sales in POS systems Check and verify all staff meals and staff discount Check and verify all Package meals.
Check and verify all settlements done on the POS system Check and cross verify if all sales have been transferred correctly to integrated system.
Check and verify for any lost postings.
Check the cost of sales in all F&B outlets and ensure that the costs are within budget
Check the menu pricing on the POS systems and ensure the correct prices are loaded
Check the restaurant and bar checks on daily Check the complimentary and confirm that all are approved.
