Synopsis
Deputizes on behalf of the Restaurant Operation Manager and Lounge Food & Beverage Manager. You will be responsible for the smooth running of the food and beverage operation and offerings within the assigned locations. You will have the responsibility to develop, innovate and deliver a product mix which is quality driven whilst maintaining aggressive financial returns. Driven by ensuring all working methods are reviewed within the assigned locations and best practices are achieved so we in turn can grow our business whilst delivering excellent guest experience, ambiance and a positive work environment for staff.
Accountabilities
Process & Profit:
Work on developing relationships, with internal suppliers to ensure the very best reputation within the industry, and to receive the service required to ensure that the operational Food and Beverage team can deliver the highest quality product, and the highest financial return on sites. You will constantly review the product range to ensure that all key quality standards are maintained
Ensure strict compliance with all relevant HSEQ legislation and requirements. Ensure that industry standards with regard to HSEQ are maintained within the assigned locations.
Manage and reconcile food & beverage invoices and journals. Manage and monitor expenditure associated with catering equipment repair/breakages, staff overtime, food cost and beverage cost. Will manage the asset register and assist in budget setting for each year for the assigned locations.
Manage the accurate completion of all reports & statistical data including passenger trends, meal wastage, & recording of inwards goods & confirmation of invoices. Ensure completion of daily/weekly stock control.
Product:
Constantly seek customer feedback and opportunities to develop the food service product in keeping with the continuous improvement framework. Champion a training culture within the Food and Beverage team to ensure succession planning, and a culture that exceeds the very best the industry has to offer.
Operations Duty officer will be the department’s representative for Special & VIP events, ensuring the utmost level of service and product standards are maintained.
People:
Operations Duty Officer has to build and maintain positive relationships with all internal stakeholders from other departments as well as management and team members. Ensure that customers are consistently provided with the highest quality of service through an inspired and motivated team. Expected to provide constant leadership, counselling, advice and feedback to their team members with openness and trust and constant feedback. Will be responsible to performance managed their direct reports.
Responsible for monthly scheduling / rostering / transportation scheduled and required pass renewals for team members.
Education & Experience
Qualification & Education: (12+4 or equivalent) in Hotels and Restaurant Management (hospitality). Competencies: analytical skills, presentation and communication skills, customer focus. Fluent English
Experience: 8+ years’ experience in hospitality, with at least 3 year in a supervisory or managerial role.
Training & Knowledge: Good know-how in management information systems, good IT skills, HACCP
